New chefs set out their plans for food success

CHEFS at two of Calderdales's top eateries are aiming for even more success.
Mark Brankin, 27, head chef at Moyles in Hebden Bridge, is aiming to make it one of the best places to eat in the country.

"This year we want to get up to two rosettes and the year after that hopefully we can get three," said Mr Brankin.

"I also want to go for Yorkshire Life's restaurant of the year. I want to see if we can win that."

The young chef has had a string of successes over his 11-year career, which has included working with Anthony Flinn (of Anthony's in Leeds), leading his Flannels restaurant to a Michelin Bib Gourmand.

He has also helped the Marriott Hollins Hall Hotel and Halifax's Shibden Mill Inn restaurants earn one and two AA rosettes respectively.

More recently, he cooked for Jamie Oliver, who stayed at the hotel while shooting his Sainsbury's Christmas commercial and loved Mark's homemade black pudding so much that he insisted his entire crew order it.

And one of Mark's former employers, the Shibden Mill has appointed a new chef.

Darren Parkinson is now heading its team of top chefs.

Last year the inn made it into the prestigious UK Top Gastro Pub List, put together by the trade's leading Pub Chef magazine, and 2009 has again seen plenty of innovation coming from the kitchen.

Mr Parkinson has a wealth of experience in a number of different cuisines.

His career includes time spent at the two-star Michelin Winteringham Fields in Lincolnshire and the five-star rated Longville Manor in Jersey.

He has moved from the Old Bore at Rishworth, where he was head chef.

Throughout this month he is showcasing Yorkshire game and fish.

Mr Parkinson said: "I intend building on the Shibden Mill Inn's reputation for fantastic Yorkshire food."

General Manager Glen Pearson said: "I believe his appointment will underpin our reputation as a destination food pub.

"His focus on game this month is already receiving rave reviews from customers.

"People want to enjoy comfort food dishes that cannot be enjoyed the same way at home, cooked with flair and passion."

The inn has just received a five-star hygiene rating from Calderdale Council.
