Eaterie makes it into the Michelin

THE owner of an Indian restaurant is thrilled to have made it into this year's Michelin Guide.

Harry Khinda, of Queensbury, owns Zaara's Authentic Indian Restaurant in Shipley, which is the only Indian eatery from Bradford to be listed from a city packed with curry experts.

It is also the only one in Yorkshire.

The only other place in Bradford to make it into the guide is The Hilton in Bradford.

Zaara's opened in 2007 and has grown in reputation for using fresh ingredients in authentic home-cooked dishes based on north Indian and Punjabi food.

Mr Khinda said: "Everything we cook is fresh and there is not too much oil or ghee. I wanted it to be created as at home.

"There are so many restaurants in Yorkshire but there is always scope for someone else who is going to do something different.

"We buy our spices whole and grind them ourselves so it's more aromatic.

"We don't buy tinned products. We boil our own chickpeas and make our own paneer (Indian cheese).

"You have got to put the time and effort in and be at the restaurant throughout the day.

"We are seeing an increase in people coming in with the recession officially over."

Mr Khinda said experimenting was the key to his dishes, with a lot of use of vegetables.

Unusual new desserts are fresh cherry and mascarpone samosas and apple and cinnamon samosas with ice-cream, using filo pastry.

"It's proving really popular," said the 38-year-old.

Mr Khinda, who was made redundant from Yorkshire Bank last year, has been cooking for 10 to 15 years, basing a lot of his creations on his mother's dishes.

The restaurant's most popular dishes are chicken balti and chicken karahi.

Also listed again in the guide this year are The Design House and Shibden Mill Inn in Halifax and Brook's restaurant in Brighouse.
